Egg Pie

Not only do I love to eat this for breakfast but often for dinner too...It's yummy!

Makes 2 Servings
Nonstick cooking spray
6oz baby spinach
mushrooms
1 pepper chopped (yellow or orange)
2 whole eggs
6 egg whites

Preheat oven to 350 and coat 9inch pie pan with nonstick spray.
Spray a skillet and place over medium high heat. Add spinach and cook, tossed until spinach has wilted.
Meanwhile, in a bowl, beat eggs and egg whites, Add spinach mixture, mushrooms and peppers to eggs and stir to combine.
Pour into pie pan and bake for 40 minutes or until eggs are set.
